What do you do when you discover you are gluten and lactose (dairy) intolerant – do you take the woe is me path or embrace it?
I chose to embrace it and my life is far richer for that. I have developed a more informed and considered way of cooking and eating – ingredients are fresh and organic as much as possible; labels are checked not only to avoid eating the wrong thing by mistake but to weed out added sugar, additives and colorings; spices and herbs are more frequently used – and these are all reflected in my original recipes which I cook from scratch every day.
Avoiding the trigger foods that provoked my intolerance symptoms has been so beneficial. I no longer feel apathetic or break out in spots or suffer from digestive issues and I lost weight without trying.
