For me, avocado toast with poached eggs is too rich. Tomato avocado toast is a great alternative. I mash the avocado with some lemon juice and I toss the baby tomatoes in a small amount of lemon vinaigrette and lay them over the top of the avocado. Great for brunch or lunch or dinner. I also scale down the version and serve it as a canape.
1 slice of bread per person (good bread essential) – toasted
1 garlic clove
1/2 an avocado per person – mashed)
Juice of 1/4 lemon
6 grape tomatoes (or more if you like) – quartered
Lemon vinaigrette (1 teasp. Dijon mustard, juice of half a lemon, 2 tbsp. olive oil)
Wipe the garlic over the toast.
Mash the avocado, add the lemon juice and mash some more.
Spread the avocado over the toast.
Top with tomatoes which have been tossed in just a little of the lemon vinaigrette.
