Chicken and anchovies seem to go together well. I often order a piece of chicken to go on top of a cesar salad. This time I made the anchovy dressing with anchovy paste. which is a very useful thing to have in the fridge because it works as a flavor enhancer and perks up a dull sauce or stew.
4 oz. arugula
2 cooked chicken breasts – cut into bite size pieces
16 black olives – cut in half
2 – 3 oz. feta cheese – cut into small cubes
4 – medium size new potatoes – cooked and cut into small pieces
Dressing
1 tsp. anchovy paste
Juice of half a lemon
2 tbsp. olive oil
Place all ingredients in a large salad bowl.
Whisk the dressing ingredients together, pour over the salad and toss well.
