Very Mediterranean diet worthy. Slim green beans, baby tomatoes, garlic and olives. Lovely mixture and quick to make.
8 oz. slim French green beans – boiled until ‘al dente’
1 tbsp. olive oil
8 ox. baby tomatoes
2 large cloves of garlic – roughly diced
1 cup of pitted olives – black or a blend of green and black, especially the fresh herbed sort
Freshly ground black pepper
Sea salt flakes
Cook the French beans
Heat the oil in a skillet and when hot, but not too hot, add the tomatoes and cook until just about bursting. Then add the garlic and cook for a couple of minutes. Tip in the green beans and olives and cook through.
At the end season with freshly ground pepper and mix.
Finish with sea salt flakes.
