Green Beans, Peas and Goat’s Cheese (serves 4)

Although I am lactose intolerant I can tolerate small amounts of goat’s cheese as it has less lactose than any cheese made with cow’s milk, so depending on how intolerant you are, you may be able to eat this. It is a very simple but rather nice recipe and takes no time at all. Really nice with chicken.

6 oz. green beans – thin ones if you can find them
6 oz. peas
1 oz. or so of goat’s cheese

Boil the beans and peas together, drain, then cot with goat’s cheese.
