Cheesy Roasted Smashed Potatoes (serves 4)

Another way to serve potatoes. They are topped with parmesan which is a low lactose cheese.

Pre-heat oven to 350 degrees F

New potatoes – 4 to 6 per person
2 tbsp. olive oil
2 tbsp. grated parmesan
Salt and freshly ground black pepper

Boil the potatoes until cooked.
Crush them a little with a potato masher.
Place potatoes on a baking tray lined with aluminum foil spread with 1 tbsp. of oil.
Brush the top of the potatoes with the other tbsp. of oil, season and sprinkle with parmesan cheese.
Cook in the oven for around 30 minutes.
