Quinoa is very versatile and because it is bland it goes with so many foods and spices. This salad can be on the table in 20 minutes which is great. While the quinoa was cooking, every other ingredient was prepared – red onion, avocado, chicken, feta cheese, craisins. I bought a pre-cooked chicken which saved time All was blended together in a large mixing bowl and lemon juice poured over, then seasoned.
1 cup quinoa cooked in 2 cups of water (see packet instructions)
1 slice of red onion – diced
1 cooked chicken breast – cut into small pieces
A handful of craisins (dried cranberries)
2 oz. feta cheese – cut into small cubes
1 avocado – cut into cubes
Juice of half a lemon
Parsley for garnish
Place quinoa in a large mixing bowl, add the rest of the ingredients and mix well together. Garnish with parsley and serve.
