Simple, healthy and filling. Can be served on a rice cracker or as a dip with chips or carrot batons or as a salad. All it takes is chickpeas, onion, garlic, oil and lemon juice.
1 can of chickpeas – drained
1/8th of a red onion (or more or less depending on how you like raw onion) – finely chopped
1 large clove of garlic – grated
3 tbsp. olive oil
1 tbsp. freshly squeezed lemon juice
Freshly ground black pepper
Mash the chickpeas. Stir in the onion and garlic followed by the oil and lemon juice and mix well. Season with freshly ground black pepper.
