Sally’s Salad (serves 4 – 6)

This is a delicious and out-of-the-ordinary salad with a great homemade dressing. I will be serving this frequently and it makes for a perfect Holiday salad as it is red and green. The greens are a blend of romaine lettuce, baby kale and cabbage with the addition of dried cherries, freshly grated Parmesan cheese and a small handful of sliced almonds.

5 oz. romaine lettuce – finely chopped
1/4 of a cabbage – finely shredded and chopped
2 oz. baby kale = chopped
2.5 oz. dried cherries
Small handful of sliced almonds
2 – 3 tbsp. freshly grated Parmesan
Place all the ingredients in a large salad bowl, pour over the dressing and toss well together.

1 tsp. Dijon mustard
1 tbsp. apple cider vinegar
1/2 tsp. good balsamic vinegar
1/2 tsp. freshly squeezed lemon juice
3 tbsp. olive oil
1/2 a medium shallot – finely chopped

Whisk together the first four ingredients and, when smooth, whisk in the oil slowly. Mix in the shallot. Pour over the salad and toss.
