Salad

Sally’s Salad (serves 4 – 6)

This is a delicious and out-of-the-ordinary salad with a great homemade dressing and comes courtesy of my friend Sally who produced it as her contribution to dinner with friends and tossed it in front of us just before serving. It is perfect year round and also for the Holiday season. The greens are a blend of romaine lettuce, baby kale and cabbage which makes for a great crunch and the addition of dried cherries, freshly grated Parmesan cheese and a small handful of sliced almonds complete this terrific salad.

5 oz. romaine lettuce – finely chopped
1/4 of a cabbage – finely shredded and chopped
2 oz. baby kale – chopped
2.5 oz. dried cherries
2 – 3 tbsp. freshly grated Parmesan
Small handful of sliced almonds

Place all the ingredients in a large salad bowl, pour over the dressing and toss well together.

Dressing
1 tsp. Dijon mustard
1 tbsp. apple cider vinegar
1/2 tsp. good balsamic vinegar
1/2 tsp. freshly squeezed lemon juice
3 tbsp. olive oil
1/2 a medium shallot – finely chopped

Whisk together the first four ingredients and, when smooth, whisk in the oil slowly. Mix in the shallot. Pour over the salad and toss.
