Chicken, Peppers and Potato Tray Bake (serves 4)

A colorful dish using a mixture of baby sweet peppers – yellow, orange and red.The pieces of chicken are bite-size, the new potatoes are quartered and slices of onion and garlic add extra flavor.

Prep. and cooking time – 1 hour
Pre-heat oven to 350 degrees F.

1 medium onion – cut into slices and broken up
2 large cloves of garlic – cut into slivers
2 chicken breasts – cut into bite-size pieces
4 oz. of mixed baby sweet peppers – de-seeded and the pith removed and cut in half or quarters
8 new potatoes – cut into quarters
2 large tbsp. of olive oil
Salt and freshly ground black pepper

Put all the ingredients in a large bowl. Pour over the oil, mix well together, season with salt and pepper.
Place them on a baking tray and cook for 45 minutes, tossing half way through.
