Summer Tomato Salad (serves 4)

Wandering by the vegetable stand in my local supermarket I noticed a colorful display of tomatoes – red, yellow, green and of all sizes. Too good to pass up. Just slice and sprinkle with red onion.

3 medium tomatoes of different colors
12 small tomatoes of different colors
1/4 of a red onion – finely sliced and diced
Olive oil
Juice of 1/2 lemon
Salt and freshly ground black pepper

Slice the big tomatoes and lay in a large serving dish.
Cut the baby tomatoes in half and lay over the tomato slices.
Sprinkle over the red onion.
Pour over some olive oil and the lemon juice and season with salt and pepper.
