Parmesan Crisps (makes 12 – 16)

These are one of the cocktail savories my mother would make years before they became available in the supermarkets. Delicate and lacy yet simple and very moreish – you do need to keep an eye on the oven though as they go from crisp to burnt in a very short time.

Prep. time – time it takes to finely grate 2 oz. Parmesan.
Cook time 5 – 8 minutes.

Pre-heat oven to 350 degrees F.

2 oz. Parmesan cheese – finely grated

Heat a metal baking tray in the oven for 5 minutes. Line with parchment paper and very lightly oil (prevents the cheese from sticking).
Take small amounts of Parmesan and squash the cheese between your fingers into a circular shape. Place on the baking tray.
Cook for 3 minutes, then check to see how they are doing, check again at 5 minutes. They want to be a little firm. If they need more time check every minute.
