This rings the changes a bit and makes a lovely side for cold roast beef. It is also easily portable for a picnic and would liven things up at a BBQ. The quantity of ingredients is a bit vague as you know how spicy you like things (taste as you mix) and how much of a sauce. You can use either Gold’s Prepared Horseradish or it’s creamy variety.
12 new potatoes
3 – 4 tbsp. mayonnaise
3 – 4 tsp. horseradish
Boil the potatoes, let cool and cut into small chunks.
Mix together the mayonnaise and horseradish in a large mixing bowl.
Tip potatoes into the bowl and toss them in the sauce.
