Cilantro Lime Rice (serves 4)

I have tried this recipe before and it was disappointing versus how I imagined it would taste. Again, this was slightly disappointing until I added liquid umami and that made all the difference. I have mentioned this product before but really it is a magic ingredient (Yondu Vegetable Umami – available in both the UK and the US).

Rice – cooked in 2 cups of water and 1 cup of rice
1 Lime – juice and zest
2 tbsp. cilantro – finely chopped
2 tsp. liquid umamu
Salt and freshly ground black pepper

Cook rice
Add the rest of the ingredients and stir well.
Best served immediately.
