I read recently that someone slathered her joint of lamb with harissa paste. Not daring to be quite so bold I opted for lamb chops. Delicious – just spread a little harissa paste on top of each chop. An option for Easter?
Pre-heat oven to 375 degrees F. and pre-heat roasting tin for chops.
1 tbsp. olive oil
2 lamb chops per person
1/2 – 1 tsp. harissa paste per chop
Pour oil into pre-heated roasting tin and coat the chops back and front and along the edge.
Spread harissa paste on each chop.
Roast in oven for a good twenty minutes or more depending how rare you like your lamb.
