For ease of convenience I used a jar of pesto but I know it would be much better with a home made sauce. Lactose intolerant people may be able, as I am, to tolerate a small amount of parmesan or pecorino cheese. Toss the chicken and all the veg, cut to similar sizes, in pesto and a little extra oil – that’s all you need to do.
Pre-heat oven at 350 degrees F.
2 chicken breasts – cut into bite size pieces
1/2 large onion – roughly chopped into chunks
2 largish zucchini – Cut into slices and then halved
12 baby tomatoes – halved
8 new potatoes – cut into bite size pieces
2 tbsp. pesto
2 tbsp. olive oil
Salt and freshly ground black pepper
Place chicken, onion, zucchini, tomatoes, new potatoes in a bowl, mix with pesto and olive oil, season with salt and pepper. Cook in oven for 45 minutes.
