Between Thanksgiving and Christmas my daily cooking takes a backseat but I still like to eat healthily and this is really easy. I heat the oven, put the sweet potato in along with the ground turkey moistened with chicken/turkey broth – no onion, no nothing. At the end I mix the turkey with some mango chutney and pop the turkey mix on top of the sweet potato. Photo may look bland but recipe tastes good.
1 sweet potato per person
1 pound of ground turkey moistened with a little chicken broth (2 – 3 tbsp.)
2 tbsp. mango chutney
Pre-heat oven to 350 degrees F
Place sweet potatoes in oven and cook for 45 minutes or until tender when pricked with a fork.
Place turkey in a lidded ovenproof dish and moisten with chicken broth.
Cook turkey for 30 minutes, remove from oven and mix in the chutney.
Cut the baked potato almost in two and spoon over some of the turkey mixture. Serve immediately.
