Another way with potatoes – very simple.
2 tbsp. olive oil seasoned with salt and freshly ground black pepper
1 large baking potato – cut into small cubes (they will cook quicker)
2 tbsp. parsley – finely chopped
Pour oil into a frying pan/skillet and when oil is nice and hot add the potatoes and parsley.
Brown the potatoes well – it will take about 20 minutes with frequent stirring until they are cooked through. Serve immediately
