Baby Tomatoes with a Herbed Goat’s Cheese Filling (allow about 4 per person)

A very simple, no cook recipe that is just a little different and tasty. It can be served as a salad item or as an hors d’oeuvre. The trick to keeping the tomatoes from falling over is to put a little blob of the goat’s cheese on the bottom of the tomato.

16 round baby tomatoes – with the top cut off and the interior(pips, etc) removed
Herbed goat’s cheese

Take about 1/2 tsp. of cheese and roll it into a ball in the palm of your hand. Pop it into the tomato shell and place the top of the tomato back on top of the cheese.
