Deliciously different – very flavorful and filling. Makes a nice vegetarian meal but can also be a side dish. Don’t mean to go about San Marzano tomatoes but… I discovered Flora brand San Marzano sun dried tomatoes which come soft and tasty in a plastic pouch.
2 cups of cooked quinoa
10 oz. baby spinach
1 tbsp. olive oil seasoned with salt and freshly ground black pepper
2 large cloves of garlic – grated
2 oz sun dried tomatoes – cut into fine slices and then chop up
3 oz. feta cheese – cut into little pieces
Cook the spinach in a little water, wrap in a T towel, squeeze out all the water, chop up the spinach.
In a large frying pan, pour in the oil and when hot enough saute the garlic briefly.
Add the spinach, sun dried tomatoes and feta and cook for 5 minutes or so until spinach is hot and the feta has melted slightly.
Arrange spinach mixture on top of the cooked quinoa and serve.
