The simple mustard sauce (just equal amounts of Dijon mustard and water) perked up the vegetable mixture very nicely. You could take any selection of veg. I chose broccolini, leeks, zucchini and peas. Goes with all sorts of meats and fish. Cook the veg. separately and only for a few minutes each till they are just done. The good thing is you can use the same water for each vegetable – just remove it with a slotted spoon.
8 oz. broccolini
1 large zucchini (about 8 oz.) – cut into small pieces
2 leeks – sliced
4 oz. peas
3 tbsp. Dijon mustard
3 tbsp. hot water
Boil veg. individually until just cooked in order as above.
Arrange on a platter.
Whisk mustard and hot water together and pour over the vegetables.
