Watermelon and Feta on a Bed of Mixed Leaves Drizzled with a Balsamic Sauce (serves 4)

So refreshing and watermelon and feta combine well – the crunch and sweetness of the watermelon and the saltiness of the feta – and I placed them on a bed of mixed leaves but you could use lettuce, baby spinach, arugula, etc. The balsamic sauce is actually a White Balsamic Reduction (Alessi brand) available in the supermarket and is the kind of thing that chefs decoratively squirt over salads in restaurants.

Mixed leaves – enough to make a nice covering of the salad bowl
6 – 8 oz. watermelon – cut into small cubes
4 oz. feta cheese – cut into small cubes
White Balsamic Reduction – to drizzle over

Place the leaves in a salad bowl. Add watermelon and feta and drizzle with balsamic reduction.
