Have long been meaning to make these and was happy with the outcome. You need the oil to be really hot to ensure they go brown on both sides. Zucchini are bland on their own so I added onions, garlic and feta cheese. A lot of people use flour or cornflour to help bind the mixture but I found that eggs by themselves did the job. If you don’t have a spiralizer you could grate the zucchini. You can make the fritters as small or large as you like.
3 medium sized zucchini – spiralized/grated
1 small onion – finely chopped
2 cloves of garlic – grated
2 oz. feta cheese – chopped into small pieces
3 eggs – beaten
2 tbsp. olive oil seasoned with salt and freshly ground black pepper
Place the zucchini, onion, garlic and feta in a large mixing bowl. Pour over the beaten eggs and mix well together.
Heat the oil in a frying pan and when sizzling ladle the mixture into the pan making individual fritters. Brown on both sides and cook the fritters through until zucchini is soft and the egg is set – length of time will depend on the size of the fritter.
