Such an easy recipe and such a nice flavor. Marinate for an hour and cook for half an hour in the oven. Serve it with a salad on the side. The juices from the chicken can be poured over the chicken to moisten it.
Pre-heat oven to 350 degrees F.
2 x chicken breasts – cut into bite size pieces
1 large clove of garlic – grated
1 tsp. preserved lemon paste (or freshly squeezed lemon juice – start with juice of 1/2 a lemon and taste the marinade, adding more juice if needed)
1 tbsp. fresh oregano – finely chopped
3 tbsp. olive oil
Salt and freshly ground black pepper
Make the marinade by mixing the garlic, preserved lemon paste, oregano and olive oil and season with salt and freshly ground black pepper.
Place chicken pieces in a large zip loc plastic bag, pour over the marinade, seal the bag and give it a good shake to make sure that all the pieces are coated in marinade.
Place in the fridge for an hour or so.
Transfer the marinated chicken into an oven proof dish with a slotted spoon (you don’t want all the marinade).
Cook in oven at 350 degrees F for 30 minutes.
