Zucchini, Tomatoes and New Potatoes (serves 4)

Perfect side dish for more or less anything – lamb, chicken, fish. Because the vegetables are roasted the zucchini aren’t soggy. You only need one roasting tray. So, lots to recommend it. I can get these little potatoes called ‘Nibbles’ and they are the same size as baby/grape tomatoes – otherwise cut new potatoes in half or quarters so they match the tomatoes. I can find really sweet little tomatoes in the supermarket at this time of the year (May) and they make the world of difference.

8 oz zucchini – quartered and cut into chunks
8 oz baby/grape tomatoes
8 oz ‘Nibbles’ potatoes or new potatoes halved or quartered
2 tbsp. olive oil
Salt and freshly ground black pepper

Combine all ingredients in a large bowl, toss with oil and season.
Tip onto a metal roasting tray.
Cook for around 30 minutes until tomatoes are splitting and potatoes are soft when pricked with a fork.
