A really good combination to serve as a side dish. Each vegetable is cooked separately and then combined just before serving.
2 tbsp. olive oil seasoned with salt and freshly ground black pepper
2 large cloves of garlic – grated
8 oz. mushrooms – rinsed, dried and quartered
1 tbsp. parsley – finely chopped
8 oz. new potatoes – boiled and sliced
8 oz. French green beans (the thin ones) – boiled until ‘al dente’
Pour 1 tbsp. oil into a skillet and season with salt and freshly ground black pepper.
When sizzling add the garlic and let cook for a couple of minutes.
Add the mushrooms and parsley to the pan. Turn down the heat a little. Cover with a lid and let cook for 10 minutes or so until mushrooms are cooked through.
Pour the other tbsp. oil seasoned with salt and freshly ground black pepper and when nice and hot add the sliced potatoes and cook until browned on each side.
Combine the mushrooms, potatoes and ‘al dente beans and serve straight away.
