You may have already seen the recipe for Scallops with Guacamole as an item to serve at a cocktail party on my website. This recipe serves them over lemony rice and the lemony sauce is both delicious and very versatile. I have served the sauce with fish and think it would be good with chicken too.
1 tbsp. olive oil seasoned with salt and freshly ground black pepper
1 pound scallops – fresh or defrosted
1 cup of wild rice – cooked according to instructions on packet
Guacamole – store bought
Heat the oil and when nice and hot add the scallops and cook until browned on both sides and the scallops are no longer translucent.
Place rice moistened with the lemon sauce (see below) on a platter. Top with scallops and top scallops with guacamole.
SAUCE
1 large clove of garlic – grated
Zest of 1/2 a lemon
1 tbsp. chopped parsley
Salt and lemon pepper
2 tbsp. olive oil
1 tbsp. lemon juice
1/2 tsp. honey
Whisk all of the ingredients together. There will be more than is needed for this recipe so pour enough over to moisten the rice.
