Ground Beef Medley (serves 4)

In times like these I find it is important to eat healthily as I am spending a lot of time sitting down so I came up with this recipe which turned out really well and you have the option of using Creole Seasoning or not. Use the leanest ground beef you can find (I used ground bison which is really lean).

Pre-heat oven to 350 degrees F.

2 tbsp. olive oil
1 sweet potato – cut into smallish cubes
1 medium onion – chopped
1 pound of ground beef
12 baby tomatoes – halved
1 x 15 oz can of black beans
6 oz. sweetcorn
1 avocado – diced

Pour 1 tbsp. of oil into an oven proof metal dish. Tip in the sweet potato and toss in the oil. Roast in the oven for some 45 minutes or until soft.
Put the other tbsp. of oil into a skillet/frying pan and, when nice and hot, add the onion and let soften and brown before the addition of the ground meat. Season with Creole seasoning at this point (optional).
When the meat mixture is cooked place it in a large bowl and add the rest of the ingredients including the cooked sweet potato. Stir together well.
