Sometimes when you’re noodling around you come up with a totally tasty recipe that satifies. I am big on quinoa as it provides a carby flavor/texture when it is actually a protein. Ground meat of any sort to me is comfort food and Patak’s curry paste has helped me out on any number of occasions. Plus in this case I was using up leftovers.
So take quinoa, ground meat, some broth and a dollop of curry paste and you are good to go!
Pre-heat oven to 350 degrees F
1/2 cup of quinoa cooked in 1 cup of water
8 oz. ground meat of your choice
1/2 cup of broth (type depends on your choice of meat)
1 tbsp. Patak’s Hot Lime Pickle – cut the lime pieces up into small pieces
Mix cooked quinoa with the rest of the ingredients and place in an ovenproof dish.
Cook for 30 minutes.
