Lamb Patties Stuffed with Spinach and Goat’s Cheese (serves 4)

I am thrilled with how this idea turned out. I started out by searing the lamb patties on both sides for a few minutes until they were nice and brown then I cut them in half and spread them with a mixture of wilted spinach, garlic and goat’s cheese, reassembled them and cooked them in the oven for 15 minutes.

Pre-heat oven to 350 degrees F.

1 tbsp. olive oil seasoned with salt and freshly ground black pepper
1 pound of ground lamb – divided into 4 patties
2 1/2 oz. baby spinach
1 oz. goat’s cheese
1 clove of garlic – grated

Heat the oil in a skillet/frying pan and when nice and hot place the patties in the pan and sear on both sides.
Blanch the spinach by pouring boiling water over it and leaving for a couple of minutes. Drain, squeeze dry and chop. Then add the cheese and garlic and mix well.
Slice the patties in two, place a quarter of the spinach mixture on the lamb and reassemble the patties so they are like a sandwich with the spinach mixture in the middle.
Place on a rack above a roasting tray and cook for 15 minutes.
