Celeriac or celery root makes a great substitute for mashed potatoes. It has a stronger flavor and goes really well with beef – fantastic with beef short ribs. I also use it as a topping for Shepherd’s Pie. If you mash it with a masher it will be a bit chunky. For a smoother version puree it in a food processor and may be add a tablespoon or two of lite coconut milk. Photo is just for illustration.
1 celeriac – peeled and cut into chunks
1 – 2 tbsp. olive oil
1 – 2 tbsp. lite coconut milk (optional)
Cook celeriac in boiling water – bring to a boil and cook for about 10 minutes until softish.
Mash or puree with oil (and coconut milk if you like).
