If there wasn’t cranberry sauce at Christmas, it wouldn’t be Christmas. I don’t like using sugar unless I really have to so making cranberry sauce presents me with a dilemma – how to make the tart cranberries sweet without sugar? I experimented with freshly squeezed Florida orange juice, marmalade and locally sourced honey and I was very pleased with the result. You can serve it slightly mashed and chunky or puree it.
12 oz. cranberries
Juice and pulp of 1 large orange
2 tbsp. marmalade
2 tsp. runny honey
Place cranberries, orange juice and pulp in a saucepan.
When cranberries are popping, add marmalade and honey and stir.
Cook for a couple more minutes, then it’s done.
