Asian Lettuce Wraps (serves 4)

With a good, sturdy lettuce as a base – romaine or iceberg – you can eat this like a wrap or sandwich, no knife and fork needed. Use ground turkey or pork for the meat; garlic, ginger, scallions and soy sauce(Tamari brand is gluten free) for the Asian flavorings; shredded carrots (bought pre-shredded) and water chestnuts for the vegetables and a nice crunch.

1 tbsp. olive oil – seasoned with freshly ground black pepper (no salt needed as soy sauce provides that)
1 pound ground turkey
2 large cloves of garlic – grated
1 x 2 inch piece of ginger – peeled and grated
1 large bunch of scallions – finely chopped
3 oz. shredded carrots
1 x 8 oz. can of chopped water chestnuts – drained and rinsed
2 -3 tbsp. gluten free soy sauce (depending on how you like the taste)
2 tbsp. chicken broth

Heat the oil in a cast iron casserole dish and, when nice and hot, add the turkey and let brown. Then add the garlic, ginger and scallions and cook for a good few minutes before adding the carrots and water chestnuts along with the gluten free soy sauce and chicken broth. Bring to a boil then turn down to a simmer and cook for 15 minutes. Serve on
lettuce leaves.
