Ground Beef with Lentils and Beans (serves 4)

This very tasty and filling and a nice combination of ingredients. It is the kind of thing you want seconds of. The little zing to it comes from Spicy V8. I ate it from a bowl like I eat chili but you could serve it with a baked/sweet potato.

1 tbsp. oil seasoned with salt and freshly ground black pepper
1 pound of ground beef (the leaner the better)
1 can of lentils – drained and rinsed
1 can of cannellini beans – drained and rinsed
1 cup passata (strained tomatoes)
1 cup Spicy Hot V8

Pour oil into a cast iron casserole dish and season. When sizzling, add the ground beef and let it brown before adding the rest of the ingredients. Bring to a boil then turn down the heat and let simmer for 30 minutes. The sauce will reduce leaving quite a thick mixture (you can add more passata and V8 in equal quantities if you prefer a more liquid dish).
