Having left over herbs from another recipe (Chicken and Mushroom Skewers) I decided to use them with lamb chops and I added in some lemon zest,juice and lemon pepper, left them to marinate for a couple of hours. Very easy and they were delicious and very tender.
Pre-heat oven to 350 degrees F
1 or 2 nice, thick lamb chops per person
1 tbsp. each of parsley, rosemary and thyme – finely chopped
Zest and juice of 1/2 a lemon
Salt and lemon pepper
3 tbsp. olive oil
Place the lamb chops in a zip loc bag.
Mix the rest of the ingredients together, pour over the chops and let marinate for 2 hours giving them a shake every once in a while.
Place on a rack above a roasting tin and cook for 30 minutes.
