Green Vegetables with Herbed Goat’s Cheese (serves 4)

Lovely and bright green to look at – broccoli florets, peas and edamame beans – with little pieces of goat’s cheese with garlic and herbs. Perfect for Meatless Monday served with new potatoes.

3 heads of broccoli – cut into florets
1 large handful of frozen peas
1 large handful of frozen edaname beans
1 oz garlic and herb goat’s cheese – cut into little pieces

Start by boiling the broccoli and just before it is cooked add the peas and edaname beans.
Drain after a few minutes more cooking and dot with the goat’s cheese.
