Avocado stuffed eggs are great – sophisticated and no mayonnaise is needed. I added a little yuzu juice as it adds a flavor that people notice but can’t quite put a name to. If taking them on a picnic I would pack them in an airtight container so they avocado doesn’t go brown (although the lemon juice should take care of that).
6 x eggs – hard boiled
1 x avocado – cut into chunks
1 x bunch of scallions – finely chopped
1/2 teasp. freshly squeezed lemon juice
A few drops of yuzu juice (available to purchase on the ‘Shop’ page of my website)
Salt and freshly ground black pepper
Halve the hard boiled eggs and place yolks in a bowl.
Add avocado and mash together well.
Add finely chopped scallions and mix together.
Add lemon juice, yuzu juice, salt and pepper and mix.
Spoon mixture into egg whites.
