Curried Potato Salad (serves 2 – 4 depending on appetite)

Good summer food. I added a variety of spices – curry powder, garam masala, cumin – and hot lime pickle (see ‘Shop’ page on my website) to the mayonnaise to get a delicious curry flavor. I made sparing use of the mayonnaise as that is the way I prefer my potato salad.

1 pound of cooked new potatoes – cut into small pieces
2 tbsp. mayonnaise
A pinch of curry powder, garam masala and cumin
1 tsp. hot lime pickle

Place the potatoes in a bowl.
Mix together the rest of the ingredients, spoon over the potatoes and toss well.
