Summer MeatLoaf (serves 4)

One of the things I associate with summer is eating Beef Loaf. It was my grandmother’s recipe and it was always served cold with new potatoes and salad. In this version I have replaced the beef with turkey and have used quinoa as a binder instead of breadcrumbs. And I added some lemon zest. I serve it with a curried potato salad.

Pre heat oven to 350 degrees F

1 medium onion – finely chopped
2 large cloves of garlic – finely chopped
1/2 cup of quinoa boiled in 1 cup of water as per instructions on packet
1 pound of ground turkey
4 oz cooked ham – finely chopped
Zest of 1/2 lemon
Handful of parsley – finely chopped
1 egg – whisked with a fork
Salt and lemon pepper

Place all ingredients in a large bowl and mix together well.
Oil a glass loaf dish.
Place meat mixture in loaf dish and pat down. Cook for 40 minutes.
Turn loaf out onto a rack to let any fat run off.
Let cool, slice and serve.
