Watermelon and Feta Salad with a Drizzle of Balsamic Reduction (per person)

So refreshing and different but the sweet and the salty go well together and the white balsamic reduction drizzled over and around adds another depth of flavor. All you need to do is to cut the watermelon (dry with a piece of paper towel first) and feta cheese into chunks the same size and arrange them in a chess board arrangement which looks rather pretty.

Watermelon – cut into smallish chunks (5 chunks per person as an appetizer)

Feta cheese – cut into smallish chunks (4 chunks per person as an appetizer)

Salt and freshly ground black pepper (I actually used lemon pepper)

White Balsamic Reduction – for drizzling (Alessi White Balsamic Reduction)

Arrange the chunks of watermelon and feta in a chessboard pattern.

Season with salt and freshly ground black pepper/lemon pepper.

Drizzle over and around with balsamic reduction.
