Jo’s Ratatouille (serves 4)

Ratatouille signals summer and therefore I serve it cold. My ratatouille doesn’t have any eggplant/aubergine in it as that is one veg. that doesn’t appeal to me, but you will find red and yellow peppers, green and yellow zucchini/squash and grape tomatoes along with the underlying base of onions and garlic. Serve it as a side dish or serve it alongside new potatoes as a vegan/vegetarian entree.

1 tbsp. olive oil seasoned with salt and freshly ground black pepper

1 good-sized onion – finely chopped

2 large cloves of garlic- grated

1 red pepper – diced

1 yellow pepper – diced

4 medium zucchini – diced

1 dry pint of grape tomatoes

8 new potatoes – cooked and diced
