Poached Eggs with Smashed Avocado and Cayenne Pepper

Avocado toast is on so many menus now and it is a great brunch dish. Usually it is served on toast but I thought it would make a change to serve it in the avocado shell. I add a pinch of cayenne pepper salt to the mashed avocado. Half an avocado and one or two poached eggs per person. Easiest to eat with a spoon.

Half and avocado – mashed together with a pinch of cayenne pepper and salt.

1 or 2 eggs – poached to your liking

Place the mashed avocado back in the empty avocado half

Top with a poached egg or two
