Great cocktail appetizer and currently in season so I served them at Easter. Take baby asparagus and wrap in prosciutto – I got four pieces from a slice of prosciutto, so a packet of prosciutto = 6 slices = 24 pieces to wrap round 24 baby asparagus. All you need is a nice hot oven so the asparagus goes tender and the prosciutto goes crisp and a baking tray covered lined with lightly oiled parchment paper = zippo washing up.
Pre-heat oven to 450 degrees F
24 pieces of baby asparagus – with the ends cut off
1 packet of prosciutto (approx. 6 oz) – each slice cut into 4 pieces
Wrap prosciutto pieces around a spear asparagus and place on a baking tray lined with oiled parchment paper. Place in oven and cook for around 7 minutes until asparagus is tender and prosciutto is crisp.
