Hasselback Potatoes (4)


Hasselback potatoes were only ‘invented’ in 1953 in Scandinavia and probably many people still haven’t heard of them or seen them on a menu but they seem to be coming more popular. They can be eaten very simply just brushed with oil or you can add such things as bacon bits or herbs. There may be a little ‘wow’ factor when you serve them.

Pre-heat oven to 350 degrees F

12 – 16 new potatoes (3 or 4 per person) – sliced almost down to the bottom of the potato but not right through.

2 tbsp. olive oil + extra for greasing the baking tray

Salt and freshly ground black pepper

Brush the baking tray with olive oil.

Place the sliced potatoes on the baking tray.

Brush the potatoes with oil – both on the top and in between the slices and season well.

Place in the oven and cook for 30 – 45 minutes depending on the size of the potatoes. Baste a couple of times throughout the cooking.
