Rice Noodles with Clam Sauce (4)

So quick. Would make a good supper after a busy day.

4 oz. rice noodles

1 tbsp. olive oil seasoned with salt and freshly ground black pepper

1 large clove of garlic – grated

1 X 6.5 oz can of chopped clams – drained

Juice of half a lemon

1 tbsp. parsley – finely chopped

Cook the noodles according to instructions on the packet.

Heat oil in a frying pan and when nice and hot add the garlic and let cook for a minute or twoo, making sure it doesn’t brown.

Add the clams and lemon juice and cook for a few minutes until cooked through.

Spoon the sauce over the noddles and serve straight away
