Thought butternut squash would go well with sausages and then tossed in honey mustard sauce. OMG – moreish
I used spicy, Italian turkey sausages but you could use spicy Italian sausages, Cumberland sausage or regular pork sausages.
Take 8 oz. sausage, 1 pound butternut – cut into bite size pieces and place in a roasting tin.
Pour over 1 tbsp. extra virgin olive oil and toss veg. and sausage.
Roast in oven for 30 minutes.
Mix 1 tbsp. runny honey and 1 tbsp. Dijon mustard together and pour over squash and sausage and nix well together. Serve immediately.
