Smoked Salmon Tarts (makes 8)

These are perfect for a special breakfast/brunch or an appetizer/starter and so easy. Take some scallions/spring onions, some smoked salmon and 6 eggs –  et voila!

6 eggs – whisked

1 large bunch of scallions/spring onions – finely sliced

4 thick slices of smoked salmon – sliced and diced

Freshly ground black pepper

Oil for greasing muffin/bun tray

Add scallions/spring onions and salmon to whisked eggs, seasoned with pepper.

Ladle in to muffin/bun tray

Cook for 20 minutes
