Mashed Rutabaga and Carrots (serves 4)

Lot of confusion (for me, being from the UK) about what a rutabaga is. On googling, I discovered this – a swede is a rutabaga or yellow turnip, while a turnip can mean a yellow turnip or a white turnip which is something different! I think that in Scotland they are known as ‘neeps’ and are often mashed together with potatoes, known as ‘tatties’. Last time I was in the UK my mother mashed the rutabaga with carrots to accompany the traditional Sunday roast and it was a tasty combination. Could probably add potatoes into the mix too.

8 oz. rutabaga – cut into small chunks

8 oz. carrots – cut into pieces (approx. same size as rutabaga chunks)

Bring water to boil in a saucepan, add rutabaga and carrots and cook for 15 mins.

Mash (with a little veg, broth/olive oil)
