Jicama Salad with Lime Dressing (serves 4)
Having some jicama left over, I thought I would use it up and because it is a little sweet, I used lime juice to offset the sweetness. I added other vegetables – celery, carrot and red onion – to the jicama. Try to have equal quantities of each vegetable with the exception of the red onion. This salad would be great as a packed lunch and you could beef it up with some chopped cold chicken.
Roughly 1/4 of a jicama – cut into matchsticks and then cut the matchsticks into thirds
Roughly 1 good-sized carrot – diced
Roughly 2 sticks celery – thinly sliced
Roughly 1/4 of a medium size red onion – finely chopped
1 tbsp. freshly squeezed lime juice
2 tbsp. extra virgin olive oil
Salt and freshly ground black pepper
