Smashed Cannellini Beans (serves 4)
Excellent with lamb. Bought a lovely, large lamb chop big enough for 2 at the local Farmer’s Market and was hoping to serve it with flageolets done the way the French do them with lamb. No flageolets to be found so decided to cook cannellini beans with veg. broth/stock, rosemary and garlic. Hardly took any time to prepare or cook. Then I mashed them a little bit. Might be nice to serve the lamb on top of the beans.
1 x can of cannellini beans – rinsed and drained
1 cup of veg. broth
2 large cloves of garlic – finely chopped
1 large sprig of rosemary – finely chopped
Salt and freshly ground black pepper
Put beans and broth in a cast iron casserole dish.
Add garlic, rosemary, salt and pepper.
Bring to boil, then simmer for 10 mins.
